Ozzy's pink palace

Ozzy has a new house to play in. We got these cubes in New Mexico, at Target, and they velcro together with little ribbons that dangle from the top for him to play with, and holes in 3 sides to crawl through. He mostly just curls up to sleep in the left one. When he gets in his crazy moods, he'll go tearing through from one side to the other. This morning, he was trying to get Panda off the top, but got spooked and ran away. What a wuss. Chris calls him a girl, and tells him to go play in his pretty pink palace.

Godchildren


These are our adorable godchildren-Sally and Eric. I can't believe how big Eric is...but he did just turn a year old in December, and Sally is about to be 3 in April. Wow! Here's a quote from Shy (the mom): "When Sister says it is time to play, IT IS TIME TO PLAY! He laughed the whole time I promise."

These pics are ones Rachel wanted to see. I finally got the lamps wired so we don't have to use the gi-normous 1970's brass lamps the Army gave us. The painting over the sofa is one we picked up in Venice and finally had framed. The two small ones are from China-girls in a kind of tribal clothing.

You can make bulgogi too!


Bulgogi Recipe (Korean BBQ)

Bulgogi literally means "fire beef", because it is usually cooked over a fire on a tabletop grill.

6 servings

2 1/2 lbs. thinly sliced rib eye steak (if slicing at home, partially freeze meat before slicing to enable you to slice it as thin as possible)
sugar
1/2 cup julienned white onion
1 tbsp minced garlic
1/2 tsp black pepper
1/2 bunch green onions, trimmed and cut in 3-inch pieces
1/2 cup oyster mushrooms, torn into strips (or use wild mushrooms, such as matsutake or chanterelles, or domestic button mushrooms). *
1/2 cup shredded carrots
1 cup water
1/2 cup plus 2 tbsp soy sauce
1/4 cup peeled, cored and pureed raw Asian pear (a Kiwi works well if you don't have pear)
2 1/2 teaspoons Asian style sesame oil
Korean or Japanese cooking rice wine

*I've had great bulgogi with more than one kind of mushroom, so feel free to experiment!

1. After thinly slicing the meat-tenderize with the flat side of knife and place in bowl. Sprinkle some sugar over the meat and mix with hands or chopsticks. Let sit for about 20 minutes while you prepare marinade.

2. Make marinade:
a. Put white onion and pear or kiwi into blender or food processor until liquidy and pour into small bowl.
b. Mix soy sauce, sugar (about 5-6 tbsp), black pepper, sesame oil, rice wine (about 3 tbsp)
c. Chop garlic into small pieces (or use garlic press), and add to sugar/meat mixture.

3. Pour both sauces into the garlic/meat mixture and mix well with *carrots, mushrooms, and green onion using hands or chopsticks, until marinade is evenly distributed throughout the meat. Refrigerate for at least two hours or overnight.

(*If you like your veggies a bit crunchier, add them right before grilling)

4. Heat a tabletop grill. Pour a little water onto the hot surface, then slowly grill the mixture plus and allow it to simmer until thoroughly cooked. If you don't have a tabletop grill, a deep frying pan will do just fine :)


Serve alone in bowl, spooning broth from grill onto separate bowl of rice, or serve on the rice itself.

For a little twist-add some cooked Korean sweet potato vermicelli (dangmyun) to cooked bulgogi and allow to simmer for 3-5 minutes together before serving in bowl together or over rice.

You can also serve with lettuce-wrapping meat up in leaf with a bit of rice and some Korean bean paste (if available).

Christmas present





This lamp was a gift from Anthony, Rachel's boyfriend. It's so pretty!!! He, Brent and Min came over a week ago and stayed for an hour chatting about college stuff. It was good to visit with them, since I hadn't seen them in a while (well, except Brent who came over for gumbo in December).

Christmas in New Mexico


What a good-looking bunch! Clockwise from left is Linda, George, Sarah, Chris, Oliver, Naomi, Nene and Dede (Chris' grandparents).


Decorating the Christmas tree.....It was a "living" Christmas tree, so you get to plant it afterward and enjoy it forever! Plus, there is an added bonus of not having it shed a metric ton of pine needles all over the floor. It looked very pretty after it was finished :).

Back in the R.O.K.

Well, here we are back in Seoul. It was so strange coming home to a house without Rachel. We really miss her, but are glad that she's doing so well, and having such a good time with Em and Ben.
We had a wonderful Christmas and New Year's with Chris' parents in Roswell, New Mexico. It was relaxing, we had tons of good food, and as soon as George sends us the pics, I'll post them for everyone to see. My camera is still broken, so we ended up taking a disposable camera, which of course I promptly forgot about as soon as we got there. Oh well... While we were there, we played golf with Chris' parents and grandparents-I was so nervous, since I'd only played one game before and it wasn't all that great, but I ended up playing decently so I wasn't too embarrassed :). Linda taught me how to crochet and I started on a throw. It's getting to be a decent size now-I worked on it on the plane on the way back. We also took a trip to Albuquerque, stayed with Oliver, Chris' brother, and did some serious shopping. We spent 2 hours in Barnes and Noble (2 stories!!!), and 2 days at the mall. We've really missed book stores, and Chris has enough sweaters to fight the cold Korean weather now. Speaking of weather, it was so warm while we were there! And sunny... Of course, we stepped off the plane and it was 12 degrees. Welcome home.
For those of you not in Louisiana, Mom moved into her new house yesterday and Rachel painted her new room. By the way, Happy Birthday EMILY!!!!! Big 23!
I'm gonna have to put some pics up as soon as my camera stops being retarded-Anthony bought us a beautiful Korean lamp for Christmas and brought it over Saturday night, and I'll probably put up a pic of my crochet project as well.
